Ristornte del BorgoWe are delighted to launch Il Ristorante del Borgo, the first restaurant from two new young stars of Marchigiano cooking. Davide Camaioni has worked at his family traditional restaurant, C'era Una Volta, and then at the 1 Michelin starred restaurant, Symposium Quattro Stagioni in Cartoceto. His old friend Davide Fabi Cannella has been working at Ascoli Piceno’s top traditional restaurant, Gallo d’Oro.

They will tell you that their first three ingredients are passion, creativity and love - from those come the greatest food. Their inspiration comes from the old ‘recipes of the grandmothers’ of Le Marche, which they interpret and reinvent.

The Marche region has long kept its secrets behind the formidable wall of the Sibillini mountains - it was the last part of Italy conquered by the Romans and the town across our valley was the last to sign up for Garibaldi’s Italy - so it is natural that its culinary excellence is less famous than neighbouring Emilia-Romagna. 

However to cognoscenti Le Marche is famed for an outstanding seafood harvest, wild mountain meats and funghi, glorious pastas, cave-aged cheeses (when the EU isn’t looking) and its signature: delicately fried packets of stuffed olives, vegetables, flowers and cheese. With one of Italy’s best agricultural climates, the ingredients are fine and the cooking style lets them shine without fuss.

The Ristorante del Borgo is open 7 days a week for lunch, dinner and, for guests staying at the Borgo, snacks by pool. The Davids can also cater for weddings, birthday parties and ceremonies at the Borgo.
